Ingredients (4 people):
- 4 pears
- 1/2 liter of Porto
- 75 gr. of cheese spread
- 1 tablespoon of raisins without seeds
- 10-12 nuts
- 100 gr. of sugar
- extra virgin oil
- mint leaves
Preparation of the stuffed pears recipe in Porto:
Put the raisins to soak in a glass of water. When inflated, drain and chop finely. Peel the pears (leaving the tail) and put them in a microwave-safe container. Pour the port wine and close the container with cooking film. Microwave them at maximum power for 16 minutes.
Remove them from the oven, let them cool and pass the Oporto to a casserole. Cook for about 5-10 minutes to reduce and thicken. Cut the pears on one side and with a knife or a spoon, remove the heart.
Peel the nuts and chop them. Put sugar (70 gr.) To melt in a pan, add a few drops of water. When it starts to take color, add the nuts and caramelize them.
In a bowl, mix the cheese with the rest of the sugar (30 gr.) And the chopped raisins. Fill the pears. Serve a few caramelized nuts in 4 individual containers. Place a pear on top of each one and water them with the sauce and garnish with mint leaves.
It is not mandatory to bake the pears in the microwave, you can also cook them in a casserole placed over the fire.
