Chickpea cream with carabineros recipe
- For 4-6 people:
- 200 gr. of chickpeas
- 8 carabineros
- 150 gr. of green beans
- 1 onion
- 1 scallion
- 2 cloves of garlic
- a branch of celery
- olive oil
- a rosemary branch
- parsley (to decorate)
Put the chickpeas (soaked on the eve and drained) in the quick pot with plenty of boiling water. Peel and chop the onion and add it together with the rosemary branch. Chop the celery branch and incorporate it. Season, close the pot and cook (at 2) for 15 minutes after the safety valve rises. After time, open the pot, remove the rosemary and excess broth (if any), and crush with the electric mixer.
Peel and slice two cloves of garlic and brown them in a pan with a drizzle of oil. Chop the scallion, add it and season. Remove the threads from the sides of the green beans, cut them in julienne and add them. Cook for 5-8 minutes. Peel the carabineros, reserve the heads and add the tails to the pan. Cover and let simmer over low heat. Once cooked, remove the carabineros to a plate and reserve them.
Pour the juice from the heads of the carabineros in a beater glass. Add a stream of olive oil, a pinch of salt and crush with the electric mixer.
Serve the chickpea cream on the bottom of a bowl and put a bunch of green beans on top. Accompany with two carabineros per serving and sauce with the carabineros oil. Garnish with a sprig of parsley.
If you have planted rosemary, to dry it you have to place it in the shade, in a well ventilated place and store it in cardboard boxes or paper bags; but never in glass or plastic jars. It retains its properties for a year.
This dish is of high nutritional value and recommended for everyone. Chickpeas, like all legumes, play an important role from the nutritional point of view because of their richness in vegetable proteins that are not accompanied by saturated fats.
They have high mineral value and provide vitamins of group B. Often, we tend to eliminate legumes from our diet with the idea that they gain weight and this is a mistake. Nothing is further from reality, since legumes provide carbohydrates that help regulate their food intake, preventing overweight.
We must be careful with the ingredients that accompany legumes. In the case of this recipe, vegetables and seafood do not significantly increase the caloric intake of the dish.
The carabineros are a source of proteins of animal origin that contribute to enrich the nutritional contribution of the legume by the presence of iron, proteins of high nutritional value, phosphorus and iodine. Green beans have few calories, provide vitamin C, beta carotene and are rich in potassium. Its fiber helps regulate cholesterol and sugar levels.
